There are 2 ways to get it: 1st: Kill all mimics, the item will spawn on the location of the last mimic - kinda a safe feature from fromsoft 2nd: Go to a mimic and use the item "Undead Hunter Charm" on it, it'll open its mouth and you can grab the item which he supposed to drop and with luck the Symbol of Avarice. (The way I got it).
